
Ok - so it's a simplified version of "homemade". I'm not making my own broth or anything here - let's not get crazy. But it's quick to put together and much better than anything out of a can. My 17 year old daughter asked for this recipe yesterday to make for the family she is currently staying with in her year abroad in France. Here is a picture of what she made (#proudmom).

1 tablespoon butter
1/2 cup chopped onion
1 clove garlic
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
1/2 - 1 pound chopped cooked chicken breast
1 1/2 cup egg noodles, cooked according to package directions
1 cup sliced carrots
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 tablespoon fresh lemon juice
salt and pepper to taste
In a large pot over medium heat, melt butter. Cook onion, garlic and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving. Add lemon juice right before serving.
